What’s Cooking In The Hermitage Kitchen? – Lasagna Soup

Lasagna Soup



  • 2 tsp. olive oil
  • 1 lb ground beef or pork
  • 1 large onion, chopped
  • 6 garlic cloves, minced
  • 2 tsp. dried oregano
  • 1/2 tsp. crushed red pepper flakes
  • 1 can tomato paste
  • 1 (14 oz.) can fire-roasted, diced tomatoes
  • 2 bay leaves
  • 6 to 8 cups of water
  • 8 oz. mafalda or bowtie pasta
  • 1 Tbsp. dried basil, or 1/4 cup fresh basil, chopped
  • salt and pepper to taste
  • Mozzarella and Parmesan cheese for garnish


  • Brown the ground beef or pork in the olive oil. Add salt and pepper to season.
  • Add the chopped onions and continue cooking until the onion is translucent and soft, about 5 minutes
  • Add the garlic, oregano, and red pepper flakes
  • Cook for another couple minutes then add the tomato paste. Cook until the tomato paste turns a brown color
  • Stir in the diced tomatoes and the bay leaves. Add the water
  • Bring to a boil and then reduce the heat and simmer for 30 minutes
  • After 30 minutes, add the pasta and cook according to the instructions on the box
  • After the pasta is cooked, stir in the basil and additional salt and pepper if needed
  • To serve, scoop a couple ladles in a bowl and spring with mozzarella and parmesan cheese

What’s Cooking In The Hermitage Kitchen? – Chicken Piccata

Chicken Piccata



  • 4 chicken cutlets
  • 2 Tbsp. olive oil
  • 1/2 cup dry white wine
  • 1 tsp. garlic, minced
  • 1/2 cup chicken broth
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. capers, drained
  • 2 Tbsp. unsalted butter
  • Fresh lemon slices


  • Season cutlets with salt and pepper, then dust with flour
  • Coat pan with nonstick spray and add olive oil
  • Saute chicken cutlets 2-3 minutes. on first side over medium-high heat. Flip and saute on the other side 1-2 minutes covered.
  • Transfer chicken to a plate and drain fat from pan
  • Deglaze the pan with wine. Add minced garlic to wine
  • Cook until garlic is slightly brown and liquid is nearly evaporated (about 2 minutes)
  • Add broth, lemon juice, and capers
  • Return chicken to pan and cook on each side for 1 minute
  • Transfer chicken to a plate again
  • Finish sauce with butter and lemon slices
  • Once the butter melts, pour sauce over chicken

How To Make Your Rooms Feel Bigger With Lighting

We all have those small rooms that no matter what we do always feel cramped. Here’s 5 ways to transform your small spaces with light to make them feel bigger than they actually are!


Light It Up!

In smaller rooms, natural light is your best friend. The addition of drapes to your windows can make your room feel more crowded and block off the light coming in. Instead, leave your windows bare so more natural light can come in and give your room more depth. If you do put drapes up, choose ones that are slightly see through so light can still shine in.


If You Don’t Have Natural Light….

Not all of us are lucky enough to have access to a ton of natural light. If this is the case, choose a few statement lights to have in your rooms to create as much light as possible. Track lighting is also beneficial in lighting up specific darker areas of a room.

Ditch The Lamps

Lamps clutter up your tables and give the appearance that a room is smaller than it is. Instead, use wall lamps or pendant lights to get the same light coverage as lamps with half the space. Wall lamps are especially beneficial for bedrooms to declutter nightstands.



Lower Your Lights

Overhead lights can cause large shadows in your room creating the illusion of a smaller room. When hanging pendant lights, hang them lower than you normally would to reduce the size of shadows in the room while still keeping the light from your overhead lights. By lowering your lights, it also creates the illusion that the ceiling is taller making the room feel bigger.

Mirrors, Mirrors, Mirrors

While mirrors are not lights, they can act like extra lighting in your room if strategically placed. Mirrors create extra depth in smaller rooms and reflect your existing lighting to brighten up the area.

What’s Cooking in the Hermitage Kitchen? – Blueberry Bread

Blueberry Bread


  • 1 egg
  • 3/4 cup orange juice
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 cup blueberries (fresh or frozen)
  • Dash of salt


  • Mix egg, juice, and sugar. Stir thoroughly
  • In another bowl, mix the dry ingredients
  • Add liquid to dry ingredients and stir by hand
  • Fold in the blueberries
  • Pour into lightly greased and floured loaf pan
  • Bake at 350° for 45-50 minutes
  • For miniature loaves: bake 4 mini loaves at 350° for 33 minutes

What’s Cooking in the Hermitage Kitchen? – Overnight Coffee Cake

Overnight Coffee Cake


  • 1 bag frozen dinner rolls
  • 1/2 cup chopped pecans
  • 1 small package instant butterscotch pudding
  • 1/2 cup brown sugar
  • 1/2 tsp. cinnamon
  • 1/2 cup butter, melted


  • Grease a bundt pan and place the frozen rolls in the bottom
  • Layer the rest of the ingredients in order ending with the melted butter on top
  • Let it sit covered overnight
  • In the morning, bake for 30 minutes at 350°
  • Be sure to watch it towards the end. If it starts to burn on top, take it out

What’s Cooking in the Hermitage Kitchen? – Tailgate Dips

Football season is officially upon us! Here’s 3 of our favorite dip recipes that can be used at any tailgate this season. Enjoy!

Corn Dip

  • 2 (12 oz.) cans Mexicorn, drained
  • 3 jalapenos, chopped
  • 1 (4oz.) can green chiles, chopped
  • 2 cups grated cheddar cheese
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 3 green onions, chopped
  • Pinch of sugar

Mix ingredients together and refrigerate for at least 2 hours before serving. Serve with Fritos or tortilla chips.


Black Bean and Corn Salsa



  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 bunch of cilantro


  • 1/4 cup balsamic vinegar
  • 1/8 cup olive oil
  • juice of 1 lime
  • 1/2 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/2 tsp. oregano


  • Wisk dressing together  and pour over salsa ingredients in a large bowl
  • Refrigerate for a couple hours before serving. Serve with tortilla chips


Slow Cooker Spinach Artichoke Dip

  • 1 (10 oz.) bag fresh spinach, roughly chopped
  • 1 (13.75 oz.) can quartered artichoke hearts, chopped and drained
  • 1 (8 oz.) brick low-fat cream cheese, cut into 1 inch cubes
  • 1 cup light sour cream or plain Greek yogurt
  • 1 cup shredded Mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup finely chopped white or red onion
  • 4 cloves garlic, minced
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt


  • Combine all ingredients in a large mixing bowl and stir until evenly combined
  • Spray cooking spray inside slow cooker then transfer dip mixture to slow cooker
  • Cook on low for 3-4 hours or on high for 2 hours, or until the dip is completely warmed through and the cheese is melted
  • Stir the dip and add salt and pepper if needed
  • Transfer to a serving dish and serve with chips, bread, or pita

One of the simplest things you can do to quickly revamp your kitchen or bathrooms is to change the hardware on your cabinets. By switching out your old cabinet pulls with new ones, you can give your cabinets a subtle makeover without ever having to buy new ones.

Switch Out Old Electrical Switches And Plates. One seriously simple trick to making any room in your home look better is changing out old electrical switches and plates. They are one thing that not many people pay much attention to, but you will definitely notice the difference once they are switched out. Installing dimmers can also add a dramatic effect on any room.

Make Your Own Framed Mirror. Framed mirrors have the potential to be pretty pricey. Making your own is an easy and inexpensive way to create a wow factor out of any plain mirror in your house.
